Parainema has deep roots on this mountain. Nelson's seedling came through the farmer who helped make the varietal famous in Honduras, with a connection back to the original mother plant.

But a great varietal is only a starting point. Every producer has to learn how the plant responds to their own soil, climate, and microclimate. Nelson has done that work at Finca Chely. The result is a smooth, balanced cup with baked apple, sweet caramel and milk chocolate, and an easy one to come back to.

Chely is a washed, medium-roast single origin, roasted in Brooklyn and available in 10.5 oz and 5 lb bags.
